The Cricket IM5S 10 Speed HH is among the smallest commercially available countertop spiral kneaders with tilting head. The tilting head allows the dough to be pulled out with ease. The removable bowl allows the dough to rest directly in the Grilletta's bowl, and thanks to the tilting head and removable bowl, the Grilletta is even easier to clean and the bowl can be put in the dishwasher. Certainly, doughs up to 100% hydration can be made with the HH model, which is designed specifically for such doughs. With non-HH models, however, it is possible to knead doughs up to 60% hydration.

If you are new to a spiral mixer, we recommend, by way of example, low speeds from 0 up to 3 for hard or large leavened doughs, speed 3 up to speed 5 for medium hydration doughs (55% to 65%) speed 5 up to 10 for doughs exceeding 65% hydration. Slowly, as you get to know your mixer better, you will find your personal preference for kneading.
