The Grilletta IM6S 10 Speed HH is the only commercially available touchscreen countertop spiral mixer with tilting head, it is union of innovation and power. From the touch screen you can control all machine settings and dough times, the screen's resistive technology also makes it usable with a stylus (not included) to use the screen without making it dirty. The flip-up head allows the dough to come out with ease. The removable bowl allows the dough to rest directly in the Grilletta's bowl, and thanks to the tilting head and removable bowl, the Grilletta is even easier to clean and the bowl can be put in the dishwasher. It has reverse gear, which is very useful for Biga preparation.

Yes, you can also make doughs at 70/80%. You just need to familiarize yourself with the mixer and use the HH model, which allows the high hydrations.

Certainly, doughs up to 100% hydration can be made with the HH model, which is designed specifically for such doughs. With non-HH models, however, it is possible to knead doughs up to 60% hydration.

If you are new to a spiral mixer, we recommend, by way of example, low speeds from 0 up to 3 for hard or large leavened doughs, speed 3 up to speed 5 for medium hydration doughs (55% to 65%) speed 5 up to 10 for doughs exceeding 65% hydration. Slowly, as you get to know your mixer better, you will find your personal preference for kneading.
